Hey y’all! Short rant today but a culinary miracle has happened and I needed to share it with you! Did I invent something new or have you had this before? y’all try it out and let me know… I think I’m on to something!
This sounds delicious!! Definitely gonna be making me some corn bread to try this!!
It also reminded me of something a work friend turned me on to back in the day that I’d completely forgotten about. She called it a BLT wedge salad. It was finely diced tomatoes that were salted a bit and set aside for awhile to bring out more of the juice. Then this was mixed with crumbled bacon and just enough mayo to make a creamy but still pourable dressing that was drizzled over a wedge of iceberg lettuce. Then it was sprinkled with more bacon and croutons, with or without your favorite cheese as desired. I liked it with bleu cheese crumbles sometimes but it was honestly perfect with no cheese at all.
I am an Ozarks hillbilly in the less than fine state of Missouri who, sadly, has an allergy to raw tomatoes. But I grow them for my husband who apparently has tomato juice flowing through his veins.
We are on the edge of a large Amish community. The wife of the owner of one general store makes honey oatmeal bread that can be thinly sliced to build perfect sandwiches. The other, on Fridays and Saturdays, has freshly baked pies, cinnamon rolls, pumpkin bread and CORN BREAD to die for. If'n I don't want to heat up our kitchen we make a grocery run to the sprawling metropolis of Windsor and pick up some home-baked goodness.
I watched a rancher outside of Windsor use a pocket knife and a garden hose to operate on a painfully bloated heifer once. Big ups to the Windsor area!
I have had 4 tomato sandwhichs in the last 2 days. Am I safe to assume you are a Dukess man? In my opinion the only way to mess it up is to use the wrong Mayo or god forbid Miracle Whip! I hope you have a great day!!!
Yummy! I love the way you play in the kitchen. I love to cook and the happy accidents have often become my favorite recipes. Crispy cornbread is good. You can also buy premade polenta -- usually comes in a roll -- slice it thinly and fry it in a bit of olive oil. It's crispy, golden goodness.
I'm with you, Corey, the summer tomatoes are THE best. Did you make the cornbread? Did I miss that part? It's hard to find good store bought cornbread, at least to my liking. (I might be picky though 😃)

If it's salsa, how about cilantro instead of basil?!

I’m a Northerner living in the West and have all the ingredients. Even buttermilk for the cornbread!
